Almost-Raw Carrot Cake Bliss Balls

It's April, which means it's time for carrot dessert! Or, more specifically, carrot snacks. These mildly sweetened carrot snacks are ideal for a 3 p.m. snack or a quick breakfast.

They're more carroty than cakey, which means they don't taste like cake and don't require any baking. They're chewy small balls made of carrots, sunflower seeds, dates, coconut, and cinnamon.

By popular demand, I created these nut-free (as long as coconut is okay) - I was tempted to try an almond version, but I resisted because sunflower seeds hold them together wonderfully. Remember these biscuits, which contain almonds and carrots?

These are quite simple to put together. Simply pulse all of the ingredients in a food processor and roll into balls.

If you like, roll them in shredded coconut; they're excellent with or without it. Store them in the fridge for a quick snack throughout the week!

In a food processor, add the sunflower seeds, 1 cup shredded coconut, cinnamon, and salt, and pulse until finely ground.
