Italian Chopped Salad

– 1 head romaine lettuce, chopped – 1 cup cherry tomatoes, halved – 1/2 English cucumber, diced


– 1/2 red onion, thinly sliced – 1/2 cup sliced black olive – 1/4 cup pepperoncini peppers, sliced


– 1/2 cup diced salami or pepperoni – 1/2 cup diced provolone cheese


– 1/4 cup extra virgin olive oil – 2 tablespoons red wine vinegar – 1 teaspoon Dijon mustard


– 1 clove garlic, minced – 1 teaspoon dried oregano – Salt and pepper to taste


In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, red onion, black olives, pepperoncini peppers, diced salami or pepperoni, and diced provolone cheese. 

In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper to make the dressing. 

1. Pour the dressing over the salad ingredients in the large bowl. 2. Toss the salad until everything is evenly coated with the dressing.

Serve immediately as a side dish or as a main course by adding grilled chicken or shrimp if desired.
