Tequila and Watermelon Aguas Frescas with Prosecco  

Prosecco adds a vibrant spritz to this light, watermelon-forward margarita. If you have a juicer on hand, you can definitely use it here.   

Summer calls for something refreshing, bright, and bubbly. This season, these agua frescas will be your go-to beverage during barbecues and summer dinner parties.

In a small saucepan, combine the water and sugar and bring to a boil, stirring until the sugar dissolves completely.  

Place the simple syrup in a heatproof bowl and allow it cool.Using a food processor or blender, purée the watermelon in batches until smooth.   

Strain the purée into a big basin or pitcher. Mix in the simple syrup, tequila, lime slices, three mint sprigs, and 1/2 cup water.  

Pour the watermelon agua fresca into ice-filled glasses, leaving 1 inch on top  

Top with Prosecco and decorate with mint leaves.The filtered watermelon juice can be kept refrigerated overnight.
