Triple-Berry Blended Oat

Oats blend well with berries and provide a wonderful source of fiber in this simple breakfast. 

For blending, old-fashioned rolled oats are ideal since they soften and absorb liquid, giving the meal a creamy, rich texture.

If you're using frozen berries, start by breaking them up in a blender before adding the rest of the ingredients.

2 cups old-fashioned rolled oats. 1 3/4 cups oat milk. 1 1/4 cups frozen or fresh blueberries, divided

1 1/4 cup fresh or frozen raspberries, divided 3/4 cup sliced fresh or frozen strawberries, divided 1/4 cup smooth, natural almond butter

2 tablespoons chia seeds. 2 teaspoons of pure maple syrup. 1/2 teaspoon of vanilla extract. 1/8 teaspoon of salt.

Combine oats, oat milk, blueberries, raspberries, strawberries, almond butter, chia seeds, maple syrup, vanilla, and salt in a blender. Process for about 1 minute, until the grains and berries are smooth. (If using frozen berries, puree in a blender until finely chopped, then add the remaining ingredients.)

Divide the mixture between four (8-ounce) jars; cover and chill for at least 8 hours. Prior to serving, top with the remaining berries.
